Chicken Stew Recipe

It doesn't get any easier than this chicken stew recipe. Here's a one pot meal that the whole family will love. This low fat chicken stew recipe can also be made in a slow cooker.

Ingredients

    • 1/2 medium onion, diced
    • 6 garlic cloves, sliced
    • 2 cups chopped carrots
    • 1 lb boneless, skinless chicken breasts, trimmed of fat and cut into 1 1/2-inch chunks
    • 4 cups low sodium chicken broth
    • 1 tsp dried thyme
    • 1/2 lb red bliss potatoes, scrubbed and quartered
    • 1/3 cup wild rice
    • 2 cups green beans, trimmed
    • Black pepper to taste

Preparation

    • In a saucepan, combine onion, garlic, carrots, chicken, chicken broth and thyme and cook over low heat for 1 hour.
    • Add the potatoes, wild rice and green beans and cook for an additional 1 1/2 hours. Add pepper to taste.
    • Alternately, add all ingredients to a slow cooker and cook for 8 hours on low setting or 4 hours on high setting.
