Strawberry Cake Recipe

Heart Healthy Recipe Diabetes Recipe
This strawberry cake is light and moist. A pretty pink cream cheese frosting gives it an extra sweet touch. Garnish each piece with some sliced strawberries.

Ingredients

  • Cake:

    • 1 package (18.25 oz) sugar free white or vanilla cake mix
    • 4 egg whites
    • 1 cup strawberries, puréed
    • 1/4 cup water
    • 1/3 cup olive oil
    • 3/4 cup strawberries, chopped
  • Icing:

    • 8 oz light cream cheese
    • 6 oz fat free strawberry yogurt
    • 1/2 cup confectioners sugar

Preparation

    • Preheat oven to 350°. Lightly coat two 9-inch round cake pans with nonstick cooking spray.
    • In a bowl, whisk together first five ingredients until smooth. Add chopped strawberries and stir to combine. Pour half the batter into each cake pan.
    • Bake for approximately 30 minutes, or until toothpick inserted in center comes out clean.
    • Remove pans from oven and allow to cool for 10 minutes on wire racks. Turn cakes onto wire racks to cool completely.
    • With a mixer, beat cream cheese, strawberry yogurt and confectioners' sugar until smooth. Spread icing on top of one cake. Place second cake on top of iced cake and spread remaining icing on top and sides.
